Welcome area: a larger-than-life cuckoo clock, flanked by three ladies in traditional costume

About the Project

Restaurant 1683, installed on 11th floor of a ware house in Downtown LA, is the second of a series of Gaggenau events, celebrating the culinary culture of the brand.
The Pop-Up restaurant was run by three-Michelin-starred chef Daniel Humm, host of Eleven Madison Park in New York City.
The guests arrived on 11th floor in a freight elevator, where they were met by a larger-than-life cuckoo clock, flanked by three ladies in traditional costume.
Around the corner of the central installation was an exhibition tracing Gaggenau's history – including early products, material developments and photographs.
The main stage inside was dressed as a wintry forest wonderland, complete with massive pine-trees, all evocative of Germany’s Black Forest where Gaggenau has its origins.
The overall atmosphere we created was a snowy forest, flooded with moonlight, which creates patterns of the branches throughout the dining space.
It was the idea of creating an immersive epicurean experience within a forest-setting, which would bring the mystic atmosphere of the Black Forest to life.
The guests took their places at one of the six chefs tables, inspired in the traditional timber-frame houses, around the sides of the space, where they could watch the chefs prepare the food while enjoying dinner.

What’s unique about it

„Restaurant 1683“ creates an absolutely unique immersive dining experience of the highes standards. Hosted by chef Daniel Humm, the setting follows the concept of the chef’s table, offering the guests the possibility to be part of the production of the food.

Gaggenau, founded in 1683 in the Black Forest as a nail-forge, originally came up with the idea of running a pop-up restaurant to celebrate the brand’s 333rd anniversary and thereby bringing its founding myth to life for an exclusive and very limited audience.

This unparalleled epicurean experience is a multi-sensory masterpiece which marries culinary perfection on a three-Michelin-star level with an immersive forest-setting, executed by Hollywood set-builders. The overall choreography, the level of execution throughout the whole experience and high attention to detail makes this an outstanding and simply magical piece fo work.
